Full-Blood Black Wagyu: 

The outside skit steak is a thick and tender cut located between the sixth and twelfth ribs. It is similar to the flank steak but has more marbling and has a very desirable robust flavor profile.

 

Cook at a high temp to get a nice crust and then cut across the grain for the ultimate in tenderness & juiciness.
