The Coulotte steak, also known as the Picanha or Top Sirloin Cap, is cut from the sirloin tip and is known to be tender while also being more on the lean side compared to many other cuts. This steak is particularly popular in Brazil and Portugal and sought after there for it's juiciness, umami and tenderness.
